The Three Grades
True connoisseurs distinguish between three categories: Beluga (largest pearls, buttery taste), Osetra (medium pearls, nutty), and Sevruga (small pearls, intense brine). A proper tasting includes all three.
The Conservation Story
Wild sturgeon populations are protected. Today, ethical caviar in Azerbaijan comes from licensed conservation farms that practice "tag and release" breeding. Our private tours visit one of only three such facilities, where you witness the production and taste straight from the source.
